Had a problem in the kitchen of the hotel that I manage, and gave Lou a call to try and get some help in a hurry. He was able to make it down before lunch and get the issue cleared away so that my kitchen staff could get on with their jobs. We didn't even have to open the dining room late. I was amazed at his speediness - and the fact that he didn't charge me any more than his usual rate for the quick service. I'd have been willing to pay it, so it was extra appreciated!
